Here is an easy plant based recipe that can be made in a short amount of time and taste delicious. This can be for a quick dinner or for a healthy lunch. This chick pea "tuna salad" is satisfying and does not require cooking. You can enjoy the same basic taste of regular tuna salad, but with a few simple changes that will transform into a light vegan meal. this can be made as a sandwich, on a salad, or crackers.


To start you will need the following ingredients:

1(15.5 ounce can or box of chickpeas)

1/2 red or yellow onion

1/4 cup of soy free vegan mayo

1 pack of dried seaweed

2-3 Tbsp dill or sweet relish

1/4 tsp sea salt

1/4 tsp of black pepper

1/4 tsp onion powder

1/4 tsp garlic powder


Directions:

mash chick peas, in a mixing bowl with a fork or masher, leave some in tact for texture.

add remaining ingredients and mix well. cover and set in fridge until cold. serve on bread ,lettuce, salad or crackers. stores well in the fridge for up to 5 days.
