Making the most out of your veggies!

Now lets talk veggies! as we know its important to get at least 3 -4 servings of veggies in per day. This can be in the form of a raw salad, steamed, roasted, or baked. The important takeaway when getting the most nutrients from your veggies, is not to over cook them, of course raw is best however, everyone is not on the same level when it comes to this area. I find that roasted various types of veggies are a good and easy way to get a lot cooked at once( which is perfect for meal prepping) and allows you to have an array of veggies on your plate. you can simply toss veggies of your choice in a big bowl, drizzle them with some grapeseed oil, season them with a little sea salt, dried herbs and seasonings, toss them and roast them in the oven on parchment paper, and voila! you have roasted sheet pan veggies. Some of my favorite veggies to roast are tomatoes, zucchini. squash, red onions, garlic, carrots, potatoes, and broccoli. the possibilities are endless, so get in there and get creative.
